Soy protein is considered risky as part of a low-histamine diet (grade 2 according to SIGHI), as the process of its extraction and processing often involves enzymatic changes that increase the level of histamine. In addition to histamine itself, it also contains other biogenic amines, such as putrescine and cadaverine, which competitively block the DAO enzyme, thereby significantly worsening the breakdown of histamine in the body. In the case of highly industrially processed isolates, there is also a risk of the presence of additives and residues of fermentation processes, which can cause an adverse reaction even with an apparently low content of the basic raw material.
