Carob is a thickening agent derived from the seeds of the common carob tree (also known as St. John’s bread). The seeds are generally considered unsuitable due to their content of histamine or other biogenic amines. In the Swiss SIGHI list, it is classified as Category 2, meaning intolerable (clear symptoms at normal consumption levels), and is also labeled as a “liberator.”
