According to SIGHI, fresh garlic is usually well tolerated (grade 0), but dried garlic can be more risky, not because of the histamine itself, the level of which remains low, but because of the higher concentration of aromatic oils. Garlic is classified as a histamine liberator, which means that it can stimulate the release of its own histamine from mast cells. In addition, the dried form is more concentrated and can irritate the digestive tract more, which intensifies symptoms in sensitive individuals.
