Glycerol (E422, glycerin) is a trihydric alcohol (polyol), which is considered a safe and well-tolerated substance in the histamine diet. It occurs naturally in fats and oils and does not act as a source of histamine or as a liberator in the body. Due to its stability and low risk of mucosal irritation, it is often rated as an inert additive in food lists (e.g. SIGHI).
