Raclette is a long-ripened cheese, graded 3 (very poorly tolerated) according to the SIGHI list, because it naturally accumulates a high amount of histamine during the ripening process. In addition to histamine itself, it also contains other biogenic amines, especially tyramine, which act as competitive inhibitors of the DAO enzyme, thereby significantly worsening the overall symptoms and slowing down the breakdown of histamine in the body.
