Skimmed milk is generally considered a very well-tolerated food in the context of histamine intolerance. Milk itself naturally does not contain a significant amount of histamine or other biogenic amines, and the process of skimming the fat does not have a negative effect on its histamine profile. Only the freshness of the product requires some caution, as bacterial activity during long storage could slightly increase the level of histamine, as well as individual tolerance of lactose or milk protein (casein), which can cause digestive problems that can be confused with symptoms of HIT. However, for the vast majority of individuals on a low-histamine diet, skimmed, pasteurized, or UHT milk is a completely safe dietary component.
