Soy lecithin is a processed soy product that is obtained during the production of soybean oil and is not fermented. Soy itself is not a high histamine food, and soy lecithin usually does not contain significant amounts of histamine. Unlike fermented soy products, its production is not associated with the formation of histamine. However, an individual reaction cannot be excluded in sensitive individuals, although it is generally considered a low-risk component in terms of histamine intolerance.
