Tartrazine (E102) is a synthetic azo dye that is classified as risky in the context of a histamine intolerance diet, specifically as a so-called histamine releaser. Although the food itself does not contain histamine, tartrazine stimulates mast cells in the body to flush their own stored histamine into the bloodstream, which can trigger or significantly worsen intolerance symptoms even in sensitive non-allergic individuals. In the SIGHI list, this substance is usually rated as grade 2 (intolerance, severe symptoms) and is therefore recommended to be strictly avoided on a low-histamine diet.
