Rye itself is naturally low-histamine, but may be more difficult for sensitive individuals to digest. However, the method of processing and the length of storage have a fundamental influence on the resulting substance content. Due to the long fermentation, leavened bread from rye (sourdough) contains a higher amount of histamine and other biogenic amines.
