Step 1
Rinse the rice and put it in a saucepan with 250 ml water and one pinch of salt. Bring to the boil, cover and cook over the lowest heat for 12 to 15 minutes until tender and the water is absorbed. Take off the heat and leave covered for 5 minutes.

Step 2
Peel and core the apples, then cut into small cubes. Trim the carrots and cut into thin half-moons. Pat the turkey steaks dry and season with the second pinch of salt.

Step 3
Heat 1 tbsp oil in a wide frying pan over a medium heat. Cook the turkey for about 2 minutes on each side. Transfer to a clean plate. Stir the carrots and apples in the pan for 2 minutes.

Step 4
Add the remaining 150 ml water and the thyme. Return the turkey and its juices to the pan, cover and simmer gently for 8 to 12 minutes. The carrots should be tender and some of the apples should soften into the sauce. The centre of the meat must reach at least 75 °C for 30 seconds.

Step 5
Mash some of the soft apple into the sauce and briefly reduce it uncovered if needed. Divide the turkey, apples, carrots and rice into two portions and serve straight away.
