Most people with histamine intolerance tolerate this food well.

While fresh beetroot is usually well tolerated and not a significant source of histamine, raw beets can be problematic due to their high oxalate content. These oxalates can irritate mucous membranes and cause an adverse reaction in more sensitive people. However, a completely different situation occurs with fermented or otherwise processed products, such as fermented and pickled beets. These are unsuitable for a low-histamine diet, because during fermentation, the activity of bacteria creates a large amount of histamine and other biogenic amines, which burden the organism with intolerance.
