Dried tomatoes are very poorly tolerated and risky by people with histamine intolerance. The process of drying and subsequent storage leads to a dramatic increase in the level of histamine and other biogenic amines compared to fresh fruit. In addition to the substance concentration itself, tomatoes also act as so-called releasers (liberators) of the body's own histamine, which in dried form makes them a food that is better to completely exclude from a strict elimination diet.
